Homemade double-chocolate cookies

I got the recipe for these cookies from lovingitvegan.com. I really fancied some cookies but am trying to reduce the amount of dairy I consume (for the environment) so I thought I’d try this recipe. It was super easy and they tasted soooo good.

You will need:

  • 1/2 cup dairy-free butter
  • 1 cup sugar (white or brown or a mix!)
  • 1 tsp vanilla extract
  • 1 cup plain flour
  • 2/3 cup cocoa powder
  • 1 tsp bicarbinate of soda
  • 1/4 tsp salt
  • 1 tbsp non-dairy milk
  • 100g dark chocolate (vegan if you want this to be an 100% vegan bake)

How to make them: Cream together the sugar and dairy free butter Add the vanilla extract and mix through. Then add all the dry ingredients and mix through! (I think you can mix together and sift all the dry ingredients separately but I was being lazy) It gets a bit tough to stir everything together when the ingredients start to combine - this is when to add your milk - it turns everything into a dough. Chop up the dark chocolate and add to the dough. Mix through. Roll the dough into balls (golf ball size) and place on a baking tray, spaced out. Bake in a 180°C preheated oven for 10 mins. Leave to cool on the tray for a bit before transferring to a cooling rack.
