Homemade hummus from dried chickpeas

I bought some dried chickpeas from For Earth’s Sake to make hummus with - finally got round to making some. This hummus has a really nice flavour - slighty different to one made from canned chickpeas. Here’s the recipe:

  • 1/2 cup of dried chickpeas
  • lemon juice
  • 1 clove of garlic
  • 3 1/2 tbsp tahini
  • olive oil
  • salt

Cook the chickpeas in boiling water for at least an hour. Drain (keeping some of the water). Blend with lemon juice, garlic, tahini, olive oil and salt until it becomes a smooth paste. Add the cooking water to make smoother if required!
