Groundnut stew / sweet potato + peanut traybake

I got this recipe from the green roasting tin by Rikmini Iyer. The great thing about this recipe is that you can chop up your veg, stick them in the oven to roast for 45 mins and get on with something else while it cooks.

First peel and slice sweet potato, ginger and onion, then put into a roasting tray with olive oil. Roast for 45 mins. Mix veg stock, a tin of tomatoes and a couple of tablespoons of peanut butter in a jug, then pour over the sweet potato and cook for a further 15 mins. After this it will be ready to eat. (Let it cool a bit first though!) I topped it with cashews and coriander + served with rice and a flatbread.
