Paneer + veg curry

Last night I made veg + paneer curry to use up old ingredients and served it with chipatis, coriander, brown rice + mango chutney.

In the curry I used:

  • 1 onion, sliced
  • a few garlic gloves
  • ginger
  • 2 red peppers, chopped up
  • ~1tsp ground coriander
  • ~1tsp ground cumin
  • ~1tsp garam masala
  • ~1tsp ground turmeric
  • ~1tsp garlic granules
  • 1 tin of coconut milk
  • 3/4 balls of frozen spinach
  • frozen peas
  • 1 block paneer
  • I forgot to add chilli 🌶️ - would recommend adding some as it was very mild!

Method:
First I fried the onion and garlic in a pan with some olive oil. Then I added the ginger, red peppers and spices. I cooked this down for a bit (maybe 10-20 mintues). Then I added the can of coconut milk, the frozen spinach, frozen peas and paneer. I let it cook for a while (maybe another 20 mins), whilst I cooked some rice and heated up some ready made chipatis, before serving.

Given I was using up some old peppers and a paneer block that was going out of date, this meal came out surprisingly well and was easy to do :-)
