Spinach and Ricotta Lasagne

I got a massive reduced bag of spinach to use up so was looking for a recipe to use it up… I found Spinach and Ricotta Lasagne when browsing the veggie section of Jamie Oliver’s website.

  • Basically you start by making a bechamel sauce: melt 50g of butter and mix in 50g of flour in a saucepan, cook for a couple of minutes, then add 800 ml of milk and stir until it thickens. I was supposed to add nutmeg to the sauce but I forgot to buy some :( I think it would have added a nice flavour if I did.
  • Then wilt the spinach down in a pan, drain it and mix it with a tub of ricotta.
  • Then layer up dried lasagne sheets with the bechamel sauce, spinach and ricotta, and parmesan (I actually used vegetarian hard cheese).
  • I baked it in the oven for around 30 mins and as seen in the insta post, it came out pretty good!! I served it with a salad of gem lettuces, fresh peas, radishes and cucumber - all of which I got reduced from the supermarket! (I try and buy the reduced items in the supermarket if I need them as it reduces food waste! Although I do feel guilty about the amount of packaging it comes in)
