Courgette, mint, pea and ricotta pasta bake

I made this meal when I was on holiday in the lake district and everyone liked it! My mum came up with the recipe though - thought I should mention that on here and not take all the credit ;)

You will need:

  • Courgettes
  • Garlic cloves
  • Mint (Chopped)
  • Ricotta
  • Veggie parmesan
  • Spelt pasta
  • Olive oil
  • Dried Thyme
  • Bread crumbs

Fry some crushed garlic and sliced courgettes in olive oil with some dried thyme. At the same time boil some pasta. When the courgettes look soft take off the heat and add the cheese and mint. Once the pasta is cooked, drain and add to the courgette/cheese mix. Pour into a dish, sprinkle with bread crumbs, drizzle with oil and bake for 20 mins or until it looks golden on top!

We served ours with garlic bread and fresh veg (toms, cucumber and radishes).
